Biscuit Cake

Ingredients for Biscuit Cake:
  • 10 egg whites 
  • 12 oz. (375g.) castor sugar
  • 15 egg yolks
  • 1/4 vanilla essence
  • 3 Tbs. evaporated milk
  • 6 oz. (185g.) flour + 1/4 baking powder - (sifted together)
  • 10 oz. (315g.) pounded plain biscuit crumbs
Method:
  1. Beat egg whites with sugar till fluffy.
  2. Add egg yolks one at a time, beating well after each addition.
  3. Stir in vanilla essence and evaporated milk.
  4. Fold in flour and biscuit crumbs. Blend well.
  5. Pour into a greased and lightly floured cake tin.
  6. Bake in a moderate oven (350°F) till well risen and golden brown.
  7. Cool before removing cake from tin.
  8. Cut in neat pieces to serve.
