Coconut Cake



This cake has a unique flavour which makes a great dessert for Deepavali! Easy Coconut Cake Recipe.


Ingredients for Coconut Cake:
  • 3 cups self-raising flour
  • 1½ cups castor sugar
  • 1½ cups grated white coconut
  • 8 rounded Tbs. butter
  • 3 eggs lightly beaten
  • ½ tsp. vanilla essence
Method:
  1. Mix flour, sugar and grated coconut together in a mixing bowl.
  2. Melt butter over low heat. Leave to cool 5 mins.
  3. Add eggs into melted butter and beat together.
  4. Pour mixture into flour, sugar and coconut mixture and mix well. Add vanilla essence.
  5. Pour into lightly greased cake tin(s).
  6. Bake in a preheated oven at 350°F for 25-30 mins.
  7. Allow to cool a little while before removing from tin(s). Slice and serve.
