Coconut Layer Cake



Coconut Layer Cake recipe. Easy cake dessert made with margarine, yeast, butter, flour, vanilla essence, evaporated milk and castor sugar.


Dough Ingredients for Coconut Layer Cake:
  • 1 Tbs. castor sugar
  • 2 Tbs. yeast
  • 1 3/4 cups warm water
  • 6 cups flour
  • 3 Tbs. margarine
Coconut Layer Ingredients:
  • 1 cup cornflour + 1/2 cup boiling water - (mixed till smooth)
Add to cournflour mixture and mix well; divide into 4 equal portions
  • 2 cups grated white coconut
  • 1 cup castor sugar
  • 4 Tbs. butter
  • 2 egg yolks
  • 4 Tbs. evaporated milk
  • 2 Tbs. vanilla essence
Method:
  1. To make dough. Mix sugar, yeast and warm water into a smooth paste and leave aside to rise.
  2. Sift flour. Add margarine and yeast mixture to it. Mix well and knead into a smooth dough.
  3. Put dough in a bowl covered with damp cloth and put in the sun for a while. Meanwhile prepare coconut layer.
  4. Roll out the yeast dough and cut into 5 equal portions. Roll each out into a 12-in. (30.5-cm.) square.
  5. Lightly grease cellophane paper and line a steaming tray. Beggining with dough, arrange layers of dough in tray alternating with coconut layer mixture.
  6. Put tray in steamer and steam over high heat for 20 mins. or till cake springs back when pressed with the finger.
  7. Cool. Cut into neat pieces and serve.
