Coffee Sponge Sandwich



Coffee Sponge Sandwich. Coffee cake recipe with coffee in it.


Ingredients for Coffee Sponge Sandwich:
  • 6 oz. (185g.) castor sugar
  • 2 oz. (60g.) melted butter
  • 6 eggs
  • 1/2 tsp. vanilla essence
  • 4 oz. (125g.) flour + 1/2 tsp. baking powder + 2 tsp. coffee powder - (sifted together)
  • warm jam
Method:
  1. Beat sugar and butter till creamy, then add eggs and vanilla essence.
  2. Fold in the flour mixture a little at a time.
  3. Pour mixture into 2 greased and floured 9 in. (23-cm.) sandwich tins.
  4. Bake in a preheated oven at 350°F for 20-30mins. See Customer Reviews and Compare Bakeware sets.
  5. Remove from oven and turn cakes onto wire trays to cool.
  6. Spread jam on the top of one cake and place the other on top of it to make a sponge sandwich.
  7. Cut into neat slices and serve.
