Victoria Sandwich



A great excuse for you to eat more cakes. Recipe for Victoria Sandwich.

Victoria Sandwich
Ingredients for Victoria Sandwich:
  • 4 oz. (125g.) margarine
  • 4 oz. (125g.) castor sugar
  • 2 large eggs (slightly beaten)
  • 1 tsp vanilla essence
  • 4 oz. (125g.) flour + ½ tsp. baking powder - (sifted)
  • ½ Tbs. strawberry jam
  • icing sugar (for sprinkling)
Method:
  1. Cream margarine and sugar till soft and creamy.
  2. Gradually add in beaten eggs, a little at a time, beating well after each addition.
  3. Add vanilla essence, then fold in flour.
  4. Pour mixture into 2 lined and greased 7-in. (18-cm) sandwich tins. Spread out evenly.
  5. Bake in preheated moderately hot oven at 375°F for about 20 mins.
  6. Remove cakes from oven and turn out to cool on wire trays.
  7. When cooled, spread jam on each and sandwich together.
  8. Place a paper doyley on top of cake and sprinkle icing sugar over. Remove doyley and serve cake.
