Thin Batter Using Rice Flour. For Kuih recipe such as Kuih Lompang and Kuih Kosui.


Ingredients for Thin Batter Using Rice Flour:
  • 120g. / 4 oz. / 4 tbsp dry rice flour
  • 1/4 tsp salt
  • enough liquid to get 560 ml / 1pt ready batter
  • 1/4 tsp alkali water
Method:
  1. Sift together rice flour and salt into a mixing bowl.
  2. Make a well in the centre and pour in 280 ml / 1/2 pt liquid. Mix well. If batter is too thick, add more liquid.
  3. Beat mixture till smooth. Strain mixture into a measuring jug.
  4. Pour in enough liquid to get 569 ml / 1pt batter.
  5. Allow to stand for 20-30 mins.
  6. Just before use, add alkali water and stir thoroughly.
Note: Syrup and coconut milk can be used as liquid for batter.
