Vadai (Fried Lentil Cake)



Deep fried lentil cake (Vadai) recipe made with lentils, green chilli, curry leaves, jintan manis and onion.


Ingredients for Vadai:
  1. 120g / 4 oz / 4 tbsp lentils (kacang dal) - soaked for at least 4 hours
  2. 1 green chilli
  3. 1 sprig curry leaf
  4. 1/2 onion
  5. 1 tsp funnel (jintan manis)
  6. 1.2 tsp salt or to taste
  7. 1 large bowl oil for deep frying
  8. 1 banana leaf
Method:
  • Strain lentils which have been soaked. Pound 3/4 lentils finely and the remainder coarsely.
  • Dice finely chilli and onion. Shred finely curry leaf.
  • Mix together the lentils, chilli, curry leaf, onion and salt.
  • Devide mixture into 8-10 portions.
  • Put one portion on the greased banana leaf.
  • Shape each portion into a flattened round, with the outer edge thinner then the centre.
  • Deep fry in heated oil till golden brown. Drain and serve.
