Recipe for Cream Puffs with sweet and savoury fillings.
Ingredients for Cream Puffs:
- 1 cup boiling water
- 4 level dsp. butter
- 1 cup flour (sifted)
- Pinch of salt
- 3 eggs
- 2 tsp. baking powder
- Put boiling water and butter into saucepan and boil.
- Add sifted flour and salt, stirring in well, till mixture is smooth and leaves sides of pan.
- Remove from fire and leave to cool a little.
- Add eggs one at a time, beating well till smooth.
- Add baking powder and continue beating till air bubbles begin to appear in the mixture.
- Arrange in small heaps on greased baking tin, using 2 teaspoons.

- When cool, make slits at sides and fill with custard.
- 1/2 pint milk (1 cup)
- 1 tsp flour (heaping)
- 1 tsp custard powder (heaping)
- 1/4 cup sugar (or less - to taste)
- Yolk of 1 egg, beaten
- 1/2 tsp vanilla essence
- Mix flour and custard powder to thin paste with some milk.
- Add the beaten egg yolk.
- Boil rest of the milk with sugar.
- Then add flour etc. and stir well till it thickens.
- Add vanilla essence.
- 1 cup milk
- 4 rounded tsp custard powder
- 4 tsp sugar
- 1/2 tsp vanilla essence
- Boil milk and sugar.
- Add custard powder that has been made into thin paste with some of the milk (cold).
- When mixture thickens and boils, add vanilla.
