Cashew Nut Cake

Recipe for Cashew Nut Cake:

Ingredients for Cashew Nut Cake:
  • 8 oz. (250g.) semolina
  • 8 oz. (250g.) butter
  • 7 egg yolks
  • 12 oz. (375g.) castor sugar
  • ½  tsp. rose essence
  • ½  tsp. vanilla essence
  • 8 oz. (250g.) cashew nuts (finely chopped)
  • 4 egg whites
Finely pounded & sifted:
  • 1 tsp. cardamoms
  • ½ nutmeg
  • ½ tsp. cinnamon
  • ½ tsp. clove
  1. A few hours before making cake or the night before, warm semolina and place in a big mixing bowl.
  2. Then add butter and mix well.
  3. Beat egg yolks with sugar till creamy.
  4. Add spices, rose essence, vanilla essence, buttered semolina and cashew nuts into egg and sugar mixture.
  5. Beat egg white till stiff and fold slowly into batter.
  6. Pour into a shallow, lined and greased baking tray. (Batter should be about 1 in./2.5cm high)
  7. Bake in a preheated moderate oven at 350°F for 1 hr.
  8. Cool before cutting. Serve.
