Coconut Tarts

Coconut Tart
How to make Coconut Tarts. Recipe for Pastries & biscuits.

Ingredients for Coconut Tarts:
  • 8 oz. (250g.) flour + pinch of salt - (sifted together)
  • 6 oz. (185g.) margarine
  • Water
  • 2 Tbs. raspberry jam
Filling Ingredients:
  • 4 oz. (125g.) margarine
  • 4 oz. (125g.) sugar
  • 2 eggs (beaten)
  • 1/2 tsp. vanilla essence
  • 6 oz. (185g.) grated coconut
  1. Rub margarine into flour till it resembles breadcrumbs.
  2. Gradually add enough water to form a smooth dough. Roll out on a floured board 1/8 in. (3mm.) thickness. Cut into rounds and line patty tins with them.
To make filling:
  1. Cream margarine and sugar till light and fluffy. Beat in eggs gradually. Add vanilla essence and grated coconut.
  2. Put a little jam in each pastry case and fill thw case with coconut filling.
  3. With remaining pastry, make swirl strips on top of each tart.
  4. Bake in a preheated oven at 375°F for 10 mins. Reduce heat to 325°F and bake for 10 mins.
  5. Remove tarts and cool on a wire tray. Serve.
