Kueh Bangkit

Hari Raya Delights. Malay Kueh Bangkit or Kuih Bangkit Recipe.

Ingredients for Kueh Bangkit:
  • 3 Tbs. milk powder
  • 8 oz. (250g.) cornflour
  • 1 lb. (500g.) tapioca flour
  • 3 pandan leaves (tied a knot)
  • 8 oz. (250g.) icing sugar (put out in the sun the day before)
  • 3 eggs
  • 1 coconut (grated)
  1. Fry tapioca flour with pandan leaves over low heat. Continue cooking till slippery in texture. Cool.
  2. Squeeze grated coconut to obtain 4 Tbs. santan. Strain through muslin.
  3. Sift tapioca flour. Keep 1 cup for dusting later.
  4. Beat sugar and eggs till creamy. Add milk powder, cornflour and tapioca flour. 
  5. Add santan and knead till smooth.
  6. Dust a wooden bangkit mould with tapioca flour. Press into small portion of dough. Cut off unwanted part. Tap mould gently on a hard surface to remove dough.
  7. Place on a flavoured baking sheets. Bake in moderate oven (350°F) till light brown. Remove and place on wire tray to cool. Store Kueh Bangkit in airtight tins.
  • Whenever mixing leftover dough, add a little egg mixture and knead well till smooth.
