How to make Kueh Kapit. Quick and easy to follow recipe. Chinese New Year Delights!

Ingredients for Kueh Kapit:
  • 7 oz. (220g.) flour + 2 oz. (60g) rice flour - (sifted together)
  • 8 oz. (250g.) castor sugar + 5 eggs - (well beaten together)
  • 1 grated coconut
  • 2 cups water
  • pinch of salt
  • some kueh kapit moulds (lightly greesed)
  1. Add water to coconut and squeeze out santan. Add pinch of salt to santan.
  2. Gradually add egg mixture to sifted ingredients, stirring gently to blend.
  3. Pour santan slowly and stir till batter is smooth.
  4. Prepare a charcoal fire and heat kapit moulds.
  5. Pour 1-2 tablespoons batter onto moulds, press close and bake both sides over fire.
  6. When batter is cooked, crust will harden outside. Remove from fire and scrape off on edges. Open mould and remove kueh.
  7. Roll or fold immediately.
  8. Cool and store Kueh Kapit in airtight containers.
