Rambutan Pudding

Desserts recipe - Rambutan pudding.

Ingredients for Rambutan Pudding:
  • 30 fresh fleshly rambutans (peeled) or 30 canned rambutans
  • 5 oz. (155g.) sugar + 3/4 cips water - (If fresh rambutans are used, mix this into a syrup)
  • 3 egg yolks
  • 1 Tbs. butter
  • 3 oz. (90g.) plain biscuits (pounded)
  • 1/4 tsp. baking powder
  • extra peeled rambutans (for garnishing) - optional 
Sauce Ingredients:
  • 3/4 cup liquid from canned rambutans or 3/4 syrup in which fresh rambutans are soaked
  • 1 Tbs. custard powder
  • 1 Tbs. evaporated milk

  1. If using fresh rambutans, use sharp knife to remove rambutan flesh in slices from seeds. Discard seeds and soak flesh in the syrup.
  2. Omit obove steps if using canned rambutans. Instead, cut rambutan flesh into thin slices.
  3. Beat egg yolks with butter till creamy.
  4. Add rambutan flesh and mix well.
  5. Stir in biscuit crumbs and baking powder.
  6. Turn into lightly greased mould and steam till firm. Check out these food steamers.
  7. Prepare sauce ingredients by stirring ingredients over low heat till thick.
  8. To serve, unmould pudding, garnish with rambutans (if used) and pour sauce over.
