Steamed Red Bean Cake

Recipe for Steamed Red Bean Cake.

Ingredients for Steamed Red Bean Cake:
  • 6 oz. (185g.) wet rice flour
  • 4 oz. (125g.) sago flour + pinch of salt - (sifted together)
  • 1 grated coconut (add 1 cup water & extract 15fl. oz./450ml. santan)
  • 8 oz. (250g.) red bean (soaked overnight, boiled till soft & mashed finely)
Syrup Ingredients:
  • 9 oz. (280g.) granulated sugar
  • 5 fl. oz. (150ml.) water
  • 4 pandan leaves (tied into a knot)
  1. Mix wet rice flour and sago flour together.
  2. Add santan gradually to flour mixture, blending into smooth batter.
  3. Bring to boil syrup ingredients in a saucepan. Stir constantly till sugar dissolves. Strain and add hot water if necessary to make 7½ fl. oz. (225ml.) liquid.
  4. Pour hot syrup gradually to the batter and stir till well blended.
  5. Stir mashed red beans into the batter.
  6. Bring water to boil in a steamer. Put a greased steaming tray in it fir 1 min.
  7. Stir the batter and pour into the tray. Steam till batter is set or skewer comes out clean when inserted into it.
  8. Cool completely before cutting. Serve.
