Delicious Tropical Fruit Flan.
Ingredients for Tropical Fruit Flan:
- 4 eggs (separate yolks & whites)
- 4 oz. (125g.) castor sugar
- 1 Tbs. salad oil
- 1 tsp. vanilla essence
- 4 oz. (125g.) flour + pinch of salt - (sifted together)
- 1 tin seeded rambutans (drained)
- 1 tin pineapple cubes (drained)
- papaya cubes
(heat together, stirring till mixture thickens & turns translucent)
- 1 cup juice from canned fruits
- 1 Tbs. cornflour
- 2 Tbs. sugar
- Prepare flan mould by greasing, then dusting lightly with flour. Shake off excess.
- Beat egg whites till stiff. Add sugar, a tablespoonful at a time, beating well after each addition. Beat till peaks are formed when beater is lifted.
- Beat egg yolks lightly with salad oil and vanilla essence.
- Fold egg yolk mixture gently into egg white mixture.
- Fold in flour in 3 batches, using a tablespoon.

. Lower heat and bake another 10 mins.
- Allow cake to cool in tin. Loosen edges with knife and turn out onto a wire tray to cool completely.
- Arrange fruits in flan and pour glaze over.
