Tropical Fruit Flan

Delicious Tropical Fruit Flan.

Ingredients for Tropical Fruit Flan:
  • 4 eggs (separate yolks & whites)
  • 4 oz. (125g.) castor sugar
  • 1 Tbs. salad oil
  • 1 tsp. vanilla essence
  • 4 oz. (125g.) flour + pinch of salt - (sifted together)
Garnishing Ingredients:
  • 1 tin seeded rambutans (drained)
  • 1 tin pineapple cubes (drained)
  • papaya cubes
Glazing Ingredients:
(heat together, stirring till mixture thickens & turns translucent)
  • 1 cup juice from canned fruits
  • 1 Tbs. cornflour
  • 2 Tbs. sugar
  1. Prepare flan mould by greasing, then dusting lightly with flour. Shake off excess.
  2. Beat egg whites till stiff. Add sugar, a tablespoonful at a time, beating well after each addition. Beat till peaks are formed when beater is lifted.
  3. Beat egg yolks lightly with salad oil and vanilla essence.
  4. Fold egg yolk mixture gently into egg white mixture.
  5. Fold in flour in 3 batches, using a tablespoon.
  6. Pour into prepared mould and bake in a preheated oven at 350F for 20 mins. See Customer Reviews and Compare Bakeware sets. Lower heat and bake another 10 mins.
  7. Allow cake to cool in tin. Loosen edges with knife and turn out onto a wire tray to cool completely.
  8. Arrange fruits in flan and pour glaze over.
