Deep-fried Sweet Bean Cake

Ingredients for Deep-fried Sweet Bean Cake:
  • 2 cups sweetened red bean paste (divide into 24 portions & roll into balls)
  • red food colouring
  • oil for deep-frying
Skin Ingredients:
  • 3 cups flour + 2 tsp. baking powder - (sifted together)
  • 1/3 cup castor sugar
  • 1/3 cup salt
  • 1 Tbs. butter
  • 3 Tbs. evaporated milk
  • 3/4 cups water
  1. Mix all the skin ingredients well and knead into a smooth dough.
  2. Make a long roll and cut into 24 equal pieces.
  3. Roll each piece between the palms into a ball. Flatten to a circle of diameter 2-in. (5-cm).
  4. Place a ball of red bean paste in the centre and bring edges together to seal properly. Roll into a ball and flatten slightly. Mark a dot in the centre with red food colouring.
  5. Heat oil and deep-fry over low heat for 5 mins.
  6. Turn heat to high and fry till golden. Drain well and serve.
