Mocha Cream Puffs

Pastry recipe - Mocha Cream Puffs.

Ingredients for Mocha Cream Puffs:
  • 3 1/2 oz. (105g.) butter
  • 1 tsp. castor sugar
  • 6 fl. oz. (180 ml.) water
  • 3 1/2 oz. (105g.) flour
  • 4 small eggs
Mocha Cream Ingredients:
  • 2 tsp. instant coffee powder
  • 12 Tbs. fine sugar
  • 2 dsp. custard powder
  • 3/4 cup heavy cream
White Frosting Ingredients:
  • 7 Tbs. icing sugar
  • 1/2 tsp. lemon juice
  • 1/2 Tbs. water
  1. Bring water, sugar and butter to boil in a heavy saucepan.
  2. Add flour all at once, remove from fire and stir vigorously.
  3. Replace pan over low heat and stir till mixture leaves side of pan.
  4. Remove from heat and allow to cool.
  5. Beat in eggs one at a time, beating well after each addition.
  6. Line bottom of baking trays with greaseproof paper and lightly grease sides. Dust with flour, shaking excess.
  7. Place puff mixture in teaspoonfuls on baking trays. Bake in a preheated oven at 400F for 15 mins. Reduce heat and bake another 10 mins. till brown and puffy. See Customer Reviews and Compare Bakeware sets.
  8. Remove from oven. Cool and cut a slit in each puff.
  9. Prepare mocha cream by mixing sugar with instant coffee powder and custard powder. Beat in heavy cream. Fill puffs with it.
  10. Make white frosting by mixing all ingredients thoroughly. Pour over puffs before serving.
