Thick Batter Using Dry Rice Flour - Basic Recipe

The coating of food with this batter is crispier than the thick batter using wheat flour but texture becomes hard when cold.

Batter Recipe Using Dry Rice Flour:
  1. 2 tbsp dry rice flour (tepung beras)
  2. a pinch of salt
  3. 4-6 tbsp water
  4. 1/8 tsp slake lime (kapur)
  • Sift rice flour and salt into a bowl.
  • Make a well in the centre.
  • Pour in 4 tbsp water and mix to a smooth batter to stand for 10-15 minutes.
  • Mix in slake lime just before use.
